Quiche Cakes (Spinach)

Quiche-spinachAs a final palate-pleasing appetizer, quiche cakes (spinach) are easy to prepare and delicious. My grand-baby girl and I had fun making these together for our upcoming holiday, family get together.

Preheat oven to 345 degrees Fahrenheit and let’s make the tastiest quiche cakes you have ever had!

You will need:

  • 2 lbs Frozen Spinach (Chopped)
  • 32 oz Cottage Cheese
  • 8 oz Mozzarella
  • 2 Cans Cream of Mushroom Soup
  • 6 Eggs
  • 1/2 Tsp Onion Powder
  • 1/4 Tsp Salt
  • 1/4 Tsp Pepper
  • 30 Foil Cupcake Wrappers
  • Cupcake Pans

Directions

Mix ALL ingredients in a large bowl until well blended. Spoon mixture just above cupcake rim. Bake in preheated oven for approximately 45 minutes to 1 hour (depending on your oven). Remove, cool and eat! Yields 30 spinach quiche cakes. Enjoy!
